Our highly experienced and arguably obsessive Master Butchers search for the very finest carcasses. Only the smallest fraction make the HANDPICKED grade.

HANDPICKED is purposely breed agnostic; that is, we refuse to be swayed by the perceived attributes of a breed; indeed experts will tell you there is more variation within a single herd. We instead select on the ACTUAL attributes of the carcass. That's important.

Grass-fed, free-roaming - we let animals be animals, that is, living outdoors on expansive, renewable lush pastures, free to exercise and graze when desired on fresh grasses year-round.
